Empty Stomach -Nicole

To be honest with you guys, I haven't eaten anything today. Instead I'm going to write about what I had for breakfast yesterday. Yesterday morning I had a breakfast sandwich. The first thing I did was sunny-side up an egg. Once the eggs were done, I mashed half an avocado and I toasted my bagel. Assembling it was the easiest part and allowed me to express my creativity because I could decorate and arrange it any way I wanted. I took my bagel and on one half I spread butter on it, and the other half had spread avocado. Then I stacked my egg onto the half of the bagel that had avocado, so that it wouldn't slide around. I also added 'Everything but the Bagel' seasoning on top of the egg. To the half of the bagel with butter I added sprouts and lots of salsa from my parents' restaurant. I then closed the two halves of my breakfast sandwich and sat down at my dinner table. One of my favorite reasons I like to make this sandwich is because of different textures. You have the crispy exterior and soft interior of the bagel, the smoothness of the runny yolk, but at the same time the crispiness of the lacy edges. More crunch and freshness from the sprouts, and the creaminess from the avocado. It's the perfect breakfast.
